The Nova coffee cooperative is responsible for the cultivation of coffee in the Northern Province of Rwanda. In particular, the area is rich in volcanic soil and surrounded by tropical biodiversity near Lake Muhazi. The place is exceptionally suitable for growing unique coffee and identity with harvest from March to June. This coffee in particular is of the Red Bourbon variety, among the best in terms of quality when grown at altitudes above 1500 meters. The processing is natural, once the ripe cherries are harvested, they are placed on African beds, especially the drying phase is extended between three and four weeks to ensure an incredible sweetness and an excellent body for the coffee. In the cup there is a particularly elastic cream with a fine and compact texture, in the nose we find characteristic notes of dried plum, the taste an extreme sweetness, which is particularly reflected in the notes of milk chocolate and dehydrated cherry, the body is dense and syrupy.
